More than a century of history
Cándido was a mythical figure of his generation, devoting his life to his profession: catering, and being the first and most prominent promoter of the Segovian suckling pig and Castilian gastronomy.
He offered his suckling pigs, which he cut into pieces with the edge of a plate, a world-famous ceremony that he created and which became a tradition in this house.
He preserved and promoted this Inn, enlarging it and establishing its fame throughout the world for its wines and delicious roasts, making it the most famous restaurant in Castile and Leon.
Our charter
Five generations who have managed to keep the tradition intact. The location, the ritual… And the suckling pig! We remain faithful to the Segovian gastronomy that Cándido promoted so that we can share our roasted Segovian suckling pig with all those who visit us.
